I first made ube cookies with chocolate drops, but recently had a brainwave for an ube cookie v2.0. Ube (oo-beh) or purple yam can be described as a mellow, slightly nutty, vanilla-like flavour. It pairs wonderfully with oreo flavours. The flavour combination is like childhood nostalgia in one bite!

Ube is something that my Filipino friend introduced to me when I was younger. I was hooked! And so grateful my friends shared their beloved ube desserts with me. Since then, ube has trended all over the internet for its distinctive beautiful purple colour in baked goods, but it’s so important to remember the cultural roots and acknowledge them when using this special ingredient.

The addition of ube halaya (ube jam) in the recipe gives it a super fudgy texture. It keeps really well and in my opinion tastes even better the next day!

If you love ube, try your hand at making your own ube halaya. It deepens and enriches the ube flavour in your baking to the next level! However if you don’t have access to purple yam or ube in your country, you can still easily make ube cake or ube ice-cream in your kitchen.

Ube oreo cookie

Ingredients

  • 300 g all purpose flour
  • 1 tsp baking soda
  • tsp cornstarch
  • ½ tsp salt
  • 170 g unsalted butter (melted)
  • 120 g brown sugar
  • 100 g castor sugar
  • 1 egg
  • 1 egg yolk
  • 120 g ube halaya
  • 1 Tbsp ube extract
  • 1 packet oreos

Instructions

  • Whisk the flour, baking soda, cornstarch and salt together in a bowl

  • In another bowl mix the melted butter, brown sugar and castor sugar until all lumps are gone

  • Mix in the egg and egg yolk

  • Add the ube halaya and ube extract

  • Pour the wet ingredients into the dry ingredients and mix together

  • Crush the oreos in a bag and mix into the cookie batter

  • With an ice-cream scoop, roll into balls

  • Cover and chill in the fridge for a few hours or overnight

  • Once ready, preheat oven to 170°C

  • Bake for about 13min. Remember they will continue to bake on the cookie sheet so it's ok if they look soft when you first take them out

  • If desired, press a few more crushed oreos to the top of the cookies when still soft – simply for the delight of aesthetics!
