Apple cinnamon chia pudding is a delightful and nutritious dish that combines the creaminess of chia pudding with the classic fall flavors of apples and cinnamon. It's a wholesome and satisfying treat that can be enjoyed for breakfast, as a snack, or even as a guilt-free dessert.

I love the flavor combination of apple and cinnamon so thought I would make a chia pudding with the apples to make a delicious breakfast.

One of the best things about a chia pudding is that you can make it the night before and then grab a healthy breakfast if you are in a rush or just can't face cooking first thing in the morning. The chia pudding will keep you full and satisfied all morning too! Just make sure you also drink plenty of water too.

Are apples low carb?

Apples are not considered low-carb when compared to foods that are very low in carbohydrates, such as leafy greens, non-starchy vegetables, and certain berries. Apples, like many other fruits, contain natural sugars, primarily in the form of fructose, which contributes to their carbohydrate content.

I did not add any sweetener to this dish as I found that the vanilla extract gave it enough sweetness for my taste. However, my tastes for sweetener may be lower than yours, so taste and adjust for your own dish.

  • Apples - any variety of apple can be used, but try Granny Smith, Gala or Honeycrisp.
  • Coconut milk - use canned coconut milk. Almond milk can be used too.
  • Cinnamon - rich in antioxidants and has anti-inflammatory properties that may help reduce inflammation in the body.
  • Vanilla - gives a touch of sweetness to the chia pudding.

Coconut would be a nice addition to this dish too. I might try that the next time.

Add chia and coconut milk.

Storage

Chia pudding should be stored in the refrigerator. Once you've prepared the pudding and allowed it to set, cover it with an airtight lid or plastic wrap. Properly sealed, chia pudding can be stored in the refrigerator for up to 5 days.

Recipe Tips

Taste the chia pudding mixture before refrigerating it. Add any sweetener to suit your desired level of sweetness. Remember that the sweetness of the apples can vary, so adjust accordingly.

Allow the chia pudding mixture to set in the refrigerator for at least 2-3 hours, but overnight is ideal. Chia seeds need time to absorb the liquid and achieve a pudding-like consistency.

Ingredients

  • 1 medium apple
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons chia seeds
  • 2 teaspoons cinnamon

Instructions

  • Peel the apple and remove the seeds and core. Grate or chop into small chunks.

  • Place the apple in a microwave and cook for 2 mins. Or saute in a pan until soft.

  • Place the chia seeds in a container or glass jar with the coconut milk. S

  • Mix together until the seeds are evenly distributed in the mixture.

  • Add the apple, cinnamon and vanilla. Shake well to mix evenly. Seal the jar and place in the fridge overnight.

  • Serve with a topping of cinnamon or sliced apples. Eat and enjoy!
